Easy Low Carb Summer Dinners

I'll be honest with you. I don't feel like cooking every day during summer. We just had a tin of sardines and a salad for lunch... and looking in the fridge, I may make scrambled eggs later.

Both my children are away at the moment, and I have a very relaxed husband. So, there's nobody who asks that million-dollar question..... "What's for dinner?"

However, I do have a few suggestions for easy, delicious and low carb dinners that I can totally imagine eating later on today. Here they are:

Paella

This dish has all the authentic flavours we love in paella, including my fave bit - the caramelized bits in the bottom of the pan. Takes just 20 minutes to make!

Lemon Chicken

Garlicky, peppery, tangy, creamy and above all lemony! Includes my trick on how to cook chicken breast that is tender and juicy and never hard and stringy.

Aubergine Parmigiana

I was chatting with my Facebook community the other day about our fave summer recipes and eggplant parmesan one came up a few times. It made me crave this recipe so much! That melted cheese.....

Perhaps I'll ask my husband to cook tonight 😉
